"Cumin potatoes are common in India; this is a different accompaniment for steak." -Veenu Chopra, New Delhi, India

4 cups cubed peeled baking potato (about 1 1/4 pounds)
1 tablespoon canola oil
1 teaspoon cumin seeds
1/2 cup finely chopped red onion
1/2 teaspoon salt
1/2 teaspoon ground coriander
1/2 teaspoon paprika
2 tablespoons minced fresh cilantro

Cook potato in boiling water 10 minutes or until tender; drain. Rinse with cold water; drain.

Heat oil in a large nonstick skillet over medium-high heat. Add cumin seeds to pan, and sauté 30 seconds. Add onion, salt, coriander, and paprika; sauté 3 minutes, stirring constantly. Add potato; sauté 2 minutes or until thoroughly heated. Remove from heat, and sprinkle with cilantro.

landen made this and it was very good about . The soup is salty and I recommend adding no salt until done (I added none). I used regular cream of mushroom and added a tbls of minced garlic. Use about 1 can of broth, homemade or low sodium, instead of 1/2 cup. Next time I will use 1 can of white wine and no broth. 1/2 cup is not enough and 2 cups makes it too thin although very tasty as a soup. Using shiitake mushrooms makes this a wonderful dish.

SWEET-AND-SOUR CHICKEN THIGHS WITH CARROTS
Turkey with Herb Dumplings from KimJ. Rusty and I made this. Substituted homemade chicken broth and Knorr bouillon powder for water and the other bouillon mix. Also substituted Costco rotisserie chicken for turkey. I almost forgot the canned soup. I adjusted the saltiness with the Knorr bouillon which is very salty before I remembered and added the canned soup. This made the dish too salty for my taste. rated:

This is the sauce for it. Made it tonight 03/07/05. Rated here: by three people. I thinned the final dish with about 1/2 cup of skimmed milk. Served three.

Chicken and white bean chili Rated by landen et. al. I used ground turkey instead of chicken. Made a half recipe. Cooked the turkey about an hour in water and then added 1 Tbs of Knorr Chicken Flavor Bouillon. Sauteed the onions in canola oil. After adding the flour to the onions and cooking a little. I stirred the onions into the Turkey and broth. No lumps. Pureed part of the beans to help thicken it more than just the flour did. Added three big handfuls of a mix of 4 shredded cheeses for Mexican cuisine. Omitted the half and half and the sour cream. I intended to substitute cottage cheese and lemon juice for the sour cream but forgot the lemon juice. Buttermilk or yogurt might be good. Used extra cumin and some oregano as a substitute for chili powder. Used a half tsp. of cayenne instead of hot sauce. Served with steamed corn tortillas.

We made this recipe on Feb. 28 and it was excellent. We (3 people) rated it and everybody would have it again. Thank you KimJ for suggesting this recipe.
The chicken from Costco® was big and the dish would serve 6. Next time increase sauce recipe by 1.25. The rotisserie chickens from other stores are usually smaller.

KimJ's Chicken with Blueberry-Ginger Chutney
The chutney can be served warm, chilled, or at room temperature. Make it first, and chill while the chicken marinates, or prepare the chutney when the chicken is almost done marinating. Compared to fresh, frozen blueberries take about five minutes longer to cook and thicken because they release additional water.

Chutney:
2 cups fresh or frozen blueberries
1/3 cup packed brown sugar
1/3 cup finely chopped onion
1/4 cup golden raisins
3 tablespoons cider vinegar
1 1/2 teaspoons grated peeled fresh ginger
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon crushed red pepper
Dash of ground cloves
1 garlic clove, minced

Chicken:
1 1/2 tablespoons olive oil
3/4 teaspoon dried basil
3/4 teaspoon dried oregano
6 (6-ounce) skinless, boneless chicken breast halves
3 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

To prepare chutney, combine first 11 ingredients in a medium saucepan; bring to a boil. Reduce heat to medium-low, and simmer 25 minutes or until thickened, stirring occasionally.

To prepare chicken, combine oil, basil, oregano, chicken, and 3 minced garlic cloves in a large heavy-duty zip-top bag; seal. Marinate in refrigerator for 2 hours, turning occasionally. Remove chicken from bag. Sprinkle 3/4 teaspoon salt and black pepper evenly over chicken.

Heat a large grill pan over medium-high heat. Cook the chicken 5 minutes on each side or until done. Serve with chutney.


Yield: 6 servings (serving size: 1 chicken breast half and about 1/4 cup chutney)

Rusty's Chicken Bombay di Faraglioni

INGREDIENTS
2.5 lbs. Chicken pieces
Vegetable oil for sautéing
1.5 cups Mushrooms, sliced
2 Onions, medium, chopped
1 tbsp Garlic, minced
1 tbsp Ginger, chopped
1 tsp Mustard seed
0.5 tsp Curry powder

2 Tomatoes, medium, chopped
1 cup Chicken stock
0.5 tsp Cinnamon powder
1 tsp Stevia powder

1 tsp Gharum masala powder
0.25 tsp Black pepper, ground

4 cups Campanelle pasta, cooked just past 'al dente' stage

DIRECTIONS

Brown chicken in oil; remove.
Sauté mushrooms in oil. Add onion, sauté. Add garlic, ginger, mustard seeds; fry until seeds begin to pop. Add curry powder; stir to prevent sticking until curry becomes fragrant.

Add tomatoes; stir until they form a sauce. Add chicken stock, cinnamon, stevia, and chicken; cover and simmer 45 minutes.

Stir in gharum masala and pepper. Serve over campanelle pasta.

Landen's boneless skinless chicken thigh recipe.
Season thighs with walnut oil, fennel seeds, fresh rosemary,chili powder, salt, pepper. Bake at 425 F. til 175 F inside.

After experimenting with this recipe, and reading some of my more "scientific" cookbooks, this process was the best. Brown the seasoned roast on all sides in a little olive oil, then cook in 275 oven until the thickest part of the roast reaches 115 degrees (about 45-55 mins). Turn oven temp up to 500, and add veggies. Cook roast until internal temp reaches 130 (about 15 mins), and veggies until they are nicely browned. You'll have a perfect med. rare. roast and delicious veggies.

Chef Dereque Marinated Portobellos with Cherry Tomatoes

4 large portobello mushrooms
1 garlic bulb crushed
1 shallot chopped
chopped parsley (I will probably use cilantro)
1:1 extra virgin oilive oil : affordable balsamic vinegar

Marinate mushrooms 1 hr or longer
Roast at 400° F. until fork tender.
Roast some cherry tomatoes beside the mushrooms.

Add roasted tomatoes to plated mushrooms and garnish with fresh basil. Cut portobellos in wedges and fan out. For a main vegetarian dish leave the portobellos whole.

Herbed Honey-Lime Sauce, from an old organic foods cookbook I got in a bargain bin:
1/2 cup (120 ml) minced onion
1 tbs (15 ml) olive oil
1 cup (240 ml) dry white wine or chicken broth
1/4 cup (60 ml) honey
1/4 cup (60 ml) lime juice
2 tsp (10 ml) dry mustard
1 tsp (5 ml) minced fresh rosemary
1/2 tsp (3 ml) salt
dash pepper
1 tsp (5 ml) cornstarch
1 tsp (5 ml) water

Sauté onion in olive oil in medium saucepan over medium heat until onion is softened. Stir in wine, honey, lime juice, mustard, rosemary, salt and pepper; mix well and bring to a boil. Combine cornstarch and water in small bowl or cup, mixing well. Add to sauce. Cook over low heat, stirring until sauce comes to a boil and thickens. Serve over cooked turkey, chicken, fish, or pork. Yields 2 cups.

Anway, the ingredients are: About two medium sized onions. Lots of mushrooms. Two or three medium sized aubergine. Can of chopped tomatoes. Generic curry spices including lots of cumin.
Chop and fry the onions with spices as usual. Quarter the mushrooms and once the onions are partially fried add them. Wait until the mushrooms are reasonably cooked. Meanwhile, roast the aubergine whole (or chopped in half).
Once roast, shred the aubergine by hand or with a knife and add it to the frying mixture. Cook for a bit longer until thoroughly mixed, add the tomatoes and enough boiling water to get a reasonably thick stew-like consistency. Cook until done.
Now you know as much as I did when I first made it succesfully. :)

Tilapia for one or two. Briefly nuke a package of 4 frozen tilapias. The outer two will loosen and the middle two will still be frozen. Put middle two back into freezer. Take a big dollop of Smart Balance Margarine® and a couple of tbs of canola oil and put in pie pan. Melt and stir with juice of 1 large yellow rangpur lime. Put squeezed lime halves into pan. The lime is much better than bottled lemon juice. Then put partly frozen fillet in pan and then turn over to coat both sides. Add sliced small tomatoes. Cook in 350 oven turning once until done. Stove top OK too. Nice to add capers.

landen's secret breakast. Heap cereal bowl with frozen stir fry veggie mix and 1 tablespoon of thai fish sauce (squid brand is good). Put bowl in plastic bag and then on a plate and tuck the bag under the bowl a little. Then microwave this until the veggies are as tender as desired. I use 8 minutes at unknown power. The veggies will cook down while this happens and the fish sauce will lose a lot of it pungent aroma. Then I add 1 tablespoon of low sodium Kikkoman® soy sauce (the Thai fish sauce has a lot of salt) and 2 tablespoons of extra virgin olive oil. Then top with 1/2 can (3.75 oz) of atlantic salmon and a whole microwaved, boiled, or baked potato. Tilt bowl a little and spoon dressing evenly over everything.

Rusty made this recipe and it was wonderful. The only change was using aluminum foil to wrap the tilapia.

Whole fresh spinach leaves just wilted would help. We had only frozen and chopped. We served it with frozen corn-on-the-cob and the latest of Rusty's wonderful salads. (recipes not available at this time). landen could go for a lot more spinach per filet. Also a real starch item would be satisfying. landen(= oinc) baked a potato later and that would be nice beside the tilapia on spinach and the corn. If Rusty is available as chef then landen prefers: Baked Wrapped Tilapia. This dish could serve two or even one. For one landen fixes emergency salad. The Smart Balance Margarine® has too much butter flavor. Better to dilute it with walnut oil or a mix of canola and extra virgin olive oils.

Drain a can of good quality salmon (preferably sockeye). Mix with cannellini beans, chopped tomato, diced shallot, chopped black or green olives, chopped parsley and basil. Dress with olive oil and lemon juice; season with salt and pepper. Serve on bread (scooped out ciabatta is very nice) or over greens.

Thank you again for fixing the wonderful soup stock
for my birthday dinner.

Here is a list of spices and herbs that I like to use for further
reference:

The spices and herbs I use the most and put in just about
everything are:

Ginger, Sage, Cardamom, and Garlic.

Other spices and herbs I use regularly are:

Chinese Five Spice,
Rosemary, Thyme, Tarragon, Mint,
Basil and Oregano (for spaghetti sauce),
Lemon Grass, and Cumin.

I will even use Curry occasionally in
small amounts so that it is not too hot.

I never use Chili as it is too hot for me.

I use Cinnamon and Nutmeg for fruit dishes
such as rhubarb or applesauce and for making pies.

I use a lot of the above spices in the bean soups
I like to make, such as split pea soup, black bean soup, and
pinto/pink bean soup, as well as in many other foods,
especially sauces for meat such as brown sauce and
coconut sauce (for Asian foods)

For coconut sauce I use Ginger, Cardamom, Garlic, Mint, Lemon Grass,
and a pinch of Curry. Coconut sauce is made by taking a can of coconut milk,
mixing cornstarch with it by mixing the cornstarch with water and
pouring into the sauce, and heating it until it turns into a thickened sauce.
It is especially good over rice, lamb, and vegetables but also good for
Oriental pork, beef, or chicken dishes with vegetables and rice.

Bastille day Côtelettes de Porc au Chef Dereque

Pork Chops with brandy and apples
Thinest pork chop cooked to 142 then the thickest to 145 F . DON'T GO MORE DONE.
Pork Chop brine for 1 chop.
1 cup apple juice
1 oz of salt.
1 Tbs brown sugar
3/4 tsp black pepper
1/4 tsp sage
2 Tbs apple cider vinegar, this seems pretty acid but you dont notice the final dish is acid.
