Tilapia for one or two. Briefly nuke a package of 4 frozen tilapias. The outer two will loosen and the middle two will still be frozen. Put middle two back into freezer. Take a big dollop of Smart Balance Margarine® and a couple of tbs of canola oil and put in pie pan. Melt and stir with juice of 1 large yellow rangpur lime. Put squeezed lime halves into pan. The lime is much better than bottled lemon juice. Then put partly frozen fillet in pan and then turn over to coat both sides. Add sliced small tomatoes. Cook in 350 oven turning once until done. Stove top OK too. Nice to add capers.

landen's secret breakast. Heap cereal bowl with frozen stir fry veggie mix and 1 tablespoon of thai fish sauce (squid brand is good). Put bowl in plastic bag and then on a plate and tuck the bag under the bowl a little. Then microwave this until the veggies are as tender as desired. I use 8 minutes at unknown power. The veggies will cook down while this happens and the fish sauce will lose a lot of it pungent aroma. Then I add 1 tablespoon of low sodium Kikkoman® soy sauce (the Thai fish sauce has a lot of salt) and 2 tablespoons of extra virgin olive oil. Then top with 1/2 can (3.75 oz) of atlantic salmon and a whole microwaved, boiled, or baked potato. Tilt bowl a little and spoon dressing evenly over everything.

Rusty made this recipe and it was wonderful. The only change was using aluminum foil to wrap the tilapia.

Whole fresh spinach leaves just wilted would help. We had only frozen and chopped. We served it with frozen corn-on-the-cob and the latest of Rusty's wonderful salads. (recipes not available at this time). landen could go for a lot more spinach per filet. Also a real starch item would be satisfying. landen(= oinc) baked a potato later and that would be nice beside the tilapia on spinach and the corn. If Rusty is available as chef then landen prefers: Baked Wrapped Tilapia. This dish could serve two or even one. For one landen fixes emergency salad. The Smart Balance Margarine® has too much butter flavor. Better to dilute it with walnut oil or a mix of canola and extra virgin olive oils.

Salmon for Mike's Party
Drain a can of good quality salmon (preferably sockeye). Mix with cannellini beans, chopped tomato, diced shallot, chopped black or green olives, chopped parsley and basil. Dress with olive oil and lemon juice; season with salt and pepper. Serve on bread (scooped out ciabatta is very nice) or over greens.
