Appetizers

Balsamic mushrooms

Chef Dereque Marinated Portobellos with Cherry Tomatoes

4 large portobello mushrooms
1 garlic bulb crushed
1 shallot chopped
chopped parsley (I will probably use cilantro)
1:1 extra virgin oilive oil : affordable balsamic vinegar

Marinate mushrooms 1 hr or longer
Roast at 400° F. until fork tender.
Roast some cherry tomatoes beside the mushrooms.

Add roasted tomatoes to plated mushrooms and garnish with fresh basil. Cut portobellos in wedges and fan out. For a main vegetarian dish leave the portobellos whole.
