landen made this and it was very good about . The soup is salty and I recommend adding no salt until done (I added none). I used regular cream of mushroom and added a tbls of minced garlic. Use about 1 can of broth, homemade or low sodium, instead of 1/2 cup. Next time I will use 1 can of white wine and no broth. 1/2 cup is not enough and 2 cups makes it too thin although very tasty as a soup. Using shiitake mushrooms makes this a wonderful dish.

Balsamic Chicken
SWEET-AND-SOUR CHICKEN THIGHS WITH CARROTS
Turkey with Herb Dumplings from KimJ. Rusty and I made this. Substituted homemade chicken broth and Knorr bouillon powder for water and the other bouillon mix. Also substituted Costco rotisserie chicken for turkey. I almost forgot the canned soup. I adjusted the saltiness with the Knorr bouillon which is very salty before I remembered and added the canned soup. This made the dish too salty for my taste. rated:

Rusty made this. Next time maybe lower salt soy sauce and reduce vinegar or replace part with white wine.

This is the sauce for it. Made it tonight 03/07/05. Rated here: by three people. I thinned the final dish with about 1/2 cup of skimmed milk. Served three.

Chicken and white bean chili Rated by landen et. al. I used ground turkey instead of chicken. Made a half recipe. Cooked the turkey about an hour in water and then added 1 Tbs of Knorr Chicken Flavor Bouillon. Sauteed the onions in canola oil. After adding the flour to the onions and cooking a little. I stirred the onions into the Turkey and broth. No lumps. Pureed part of the beans to help thicken it more than just the flour did. Added three big handfuls of a mix of 4 shredded cheeses for Mexican cuisine. Omitted the half and half and the sour cream. I intended to substitute cottage cheese and lemon juice for the sour cream but forgot the lemon juice. Buttermilk or yogurt might be good. Used extra cumin and some oregano as a substitute for chili powder. Used a half tsp. of cayenne instead of hot sauce. Served with steamed corn tortillas.

We made this recipe on Feb. 28 and it was excellent. We (3 people) rated it and everybody would have it again. Thank you KimJ for suggesting this recipe.
The chicken from Costco® was big and the dish would serve 6. Next time increase sauce recipe by 1.25. The rotisserie chickens from other stores are usually smaller.

KimJ's Chicken with Blueberry-Ginger Chutney
The chutney can be served warm, chilled, or at room temperature. Make it first, and chill while the chicken marinates, or prepare the chutney when the chicken is almost done marinating. Compared to fresh, frozen blueberries take about five minutes longer to cook and thicken because they release additional water.

Chutney:
2 cups fresh or frozen blueberries
1/3 cup packed brown sugar
1/3 cup finely chopped onion
1/4 cup golden raisins
3 tablespoons cider vinegar
1 1/2 teaspoons grated peeled fresh ginger
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon crushed red pepper
Dash of ground cloves
1 garlic clove, minced

Chicken:
1 1/2 tablespoons olive oil
3/4 teaspoon dried basil
3/4 teaspoon dried oregano
6 (6-ounce) skinless, boneless chicken breast halves
3 garlic cloves, minced
3/4 teaspoon salt
1/4 teaspoon freshly ground black pepper

To prepare chutney, combine first 11 ingredients in a medium saucepan; bring to a boil. Reduce heat to medium-low, and simmer 25 minutes or until thickened, stirring occasionally.

To prepare chicken, combine oil, basil, oregano, chicken, and 3 minced garlic cloves in a large heavy-duty zip-top bag; seal. Marinate in refrigerator for 2 hours, turning occasionally. Remove chicken from bag. Sprinkle 3/4 teaspoon salt and black pepper evenly over chicken.

Heat a large grill pan over medium-high heat. Cook the chicken 5 minutes on each side or until done. Serve with chutney.


Yield: 6 servings (serving size: 1 chicken breast half and about 1/4 cup chutney)

Rusty's Chicken Bombay di Faraglioni

INGREDIENTS
2.5 lbs. Chicken pieces
Vegetable oil for sautéing
1.5 cups Mushrooms, sliced
2 Onions, medium, chopped
1 tbsp Garlic, minced
1 tbsp Ginger, chopped
1 tsp Mustard seed
0.5 tsp Curry powder

2 Tomatoes, medium, chopped
1 cup Chicken stock
0.5 tsp Cinnamon powder
1 tsp Stevia powder

1 tsp Gharum masala powder
0.25 tsp Black pepper, ground

4 cups Campanelle pasta, cooked just past 'al dente' stage

DIRECTIONS

Brown chicken in oil; remove.
Sauté mushrooms in oil. Add onion, sauté. Add garlic, ginger, mustard seeds; fry until seeds begin to pop. Add curry powder; stir to prevent sticking until curry becomes fragrant.

Add tomatoes; stir until they form a sauce. Add chicken stock, cinnamon, stevia, and chicken; cover and simmer 45 minutes.

Stir in gharum masala and pepper. Serve over campanelle pasta.

Landen's boneless skinless chicken thigh recipe.
Season thighs with walnut oil, fennel seeds, fresh rosemary,chili powder, salt, pepper. Bake at 425 F. til 175 F inside.
